Recipe: Cranberry, Blood Orange, and Meyer Lemon Vinaigrette

citrus-vinaigrette-256-236Dining Services Manager Joel Fath found himself with a few spare moments – and a few spare blood oranges! – and whipped up this citrus-themed dressing sharpish.

  • 1 cup Cranberry Vinegar
  • 1/2 tsp Sea Salt
  • 2 Tbsp minced shallot
  • Juice of one Meyer Lemon, scant Tbsp
  • Juice of one Blood Orange, scant Tbsp
  • 2-3 tsp Meyer Lemon simple syrup
  • 1 cup Extra Virgin Olive Oil.

Blend all the ingredients except the olive oil with an immersion blender until smooth. Slowly pour olive oil into vinegar mixture while blending.
