Here’s a quick and tasty way to rustle up some Brussels without a lot of fuss. Speaking of which, picky children have been known to actually eat these things!
1 lb. Brussels sprouts, cleaned and halved
1 tbsp. extra-virgin olive oil
Freshly ground black pepper
Juice of 1/2 lemon or orange
~ In a large skillet, heat the oil over medium-high heat. Once hot, add the sprouts flat-side down and cook undisturbed for 5-7 minutes until the bottoms become slightly caramelized.
~ Stir well, lower the heat to medium, add the citrus juice, and cover. Steam the sprouts for an additional 6-8 minutes until tender.
~ Season with salt and pepper and serve.
