Recipe: Vegan Caesar Salad Dressing

vegan-caesarWhat is Pendle Hill’s favorite salad dressing? Why, the vegan caesar, of course.

Pureé in blender:

  • ½ cake tofu
  • ⅙ cup lemon juice
  • ¼ cup miso
  • ¼ cup nutritional yeast
  • 2 garlic cloves, minced
  • ⅛ cup soy sauce
  • ¼ teaspoon pepper
  • 1½ cups olive oil
  • ⅜ cup water

Slather liberally on hearts of romaine punctuated by some hand-picked seasoned croutons and you might be tempted to skip the dessert altogether!
