These molasses cookies, created by former Pendle Hill chef Albert Sabatini, are sweet, buttery, and full of spicy flavor for the fall. Delicious with a glass of milk… or mulled hot cider!
Ingredients:
- 3 cups flour (good with half whole wheat flour)
- 2 tsp cloves
- 1 tsp baking soda
- 1 tsp ginger
- 1 tsp cinnamon
- 3/4 tsp salt
- 1 1/8 cups butter
- 1 1/8 cups sugar
- 3/8 cup molasses
- 1 jumbo egg or 2 medium eggs
Preheat oven to 350 degrees. Sift together flour, cloves, baking soda, ginger, cinnamon, and salt. In a separate bowl, cream the butter and add the sugar. Blend thoroughly. Beat in the egg(s) and molasses, then gently stir in the sifted dry ingredients until just blended. Drop the dough by teaspoonfuls onto greased baking sheets and bake for ten minutes.
Makes about 5 1/2 dozen cookies.
