Recipe: Chilled Watermelon Soup

Creamy and naturally sweet, this cool soup is delightful on a hot summer’s day.

Ingredients:

  • Organic Seedless Watermelon
  • About 1 cup Sour Cream
  • Fresh Mint
  • Strawberries, Blueberries, Raspberries, or any seasonal Berry
  • Salt

Slice the rind off of the watermelon and cut the flesh into cubes. Combine in a blender with the sour cream, using enough to make the soup creamy, but not too thick. Slice mint leaves using a chiffonade cut (stack leaves, roll tightly, slice into fine ribbons) and stir into the soup. Season with salt to taste, and add whatever berries you like for a finishing touch. Serve chilled.
