Dining Services Manager Joel Fath found himself with a few spare moments – and a few spare blood oranges! – and whipped up this citrus-themed dressing sharpish.
- 1 cup Cranberry Vinegar
- 1/2 tsp Sea Salt
- 2 Tbsp minced shallot
- Juice of one Meyer Lemon, scant Tbsp
- Juice of one Blood Orange, scant Tbsp
- 2-3 tsp Meyer Lemon simple syrup
- 1 cup Extra Virgin Olive Oil.
Blend all the ingredients except the olive oil with an immersion blender until smooth. Slowly pour olive oil into vinegar mixture while blending.
