These Irish Potatoes look so much like potatoes you’d swear they were actual potatoes*… until you bite into one! This recipe makes for 60 of these little imps.
Directions:
Cream together using electric mixer:
~ ½ Cup Butter
~ 1 Cup Cream Cheese
When smooth, add slowly and continue mixing:
~ 1 tsp Vanilla
~ 4 Cups sifted Confectioners’ Sugar
Stir in:
~ 2 ½ Cups Flaked Coconut
Roll mixture into potato shaped balls (the size of a large Easter egg) and then roll them in:
~ Cinnamon
Keep the sweets separated on a cookie sheet and refrigerate to set.
*they’re also a lot smaller than regular potatoes.
