Recipe: Jicama Orange Avocado Salad

Jicama Orange Avocado SaladThis recipe is great for a hot summer day. We love it because it gives the cook a break from the hot oven and it’s cool and refreshing.

Ingredients:

  • 1 Jicama
  • 3 Oranges
  • 1-2 firm Avocados

Dressing:

  • 1 bunch fresh Cilantro
  • 2 cloves Garlic
  • 1 Lime (use for zest and for juice)
  • Salt and Pepper
  • 1/4 cup Vinegar (we like red wine vinegar, white wine vinegar, or apple cider vinegar)
  • 1/3 cup Olive Oil
  • Honey to taste

Peel and cut jicama into matchstick slices. Peel and quarter orange segments. Combine and set aside. Cut avocado in half and remove pit. Carefully pull away the avocado skin and slice the flesh into bite-size pieces. Combine dressing of cilantro, garlic, lime zest, lime juice, salt & pepper, honey, and apple cider vinegar, and drizzle in olive oil to emulsify. Mix dressing with the prepared jicama and orange. When ready to serve, carefully toss in the avocado pieces, stirring sparingly to preserve chunks of avocado.
