Recipe: Gingerbread Pumpkin Scones

Gingerbread Pumpkin SconesDelicious – and very tender!

12 scones

Combine the following dry ingredients:

  • 3 cups flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 tablespoon grated or ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • ½ teaspoon salt

Have ready:

  • ½ cup (one stick) butter, softened
  • 1 cup pumpkin puree
  • 3/4 cup yogurt
  • 2 eggs, lightly beaten
  • 1/3 cup molasses

Preheat the oven to 350°.

Cut the butter into the dry ingredients with a pastry cutter or two knives. Mix in the remaining ingredients, stirring only until thoroughly blended. With an ice cream scoop, drop scoopfuls onto a greased baking sheet. Bake 20 minutes, until golden.
