Recipe: Cranberry Orange Bread

Cranberry Orange BreadThis recipe is part of a collection from the Pendle Hill kitchen that goes back many years.

1 loaf

2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1 tablespoon orange zest
¼ teaspoon salt

1/3 cup applesauce
1 egg, lightly beaten
1 cup dried cranberries
½ cup chopped nuts (optional)

Preheat the oven to 350°.

Combine the flour, sugar, baking powder, orange zest, and salt. Mix in the wet ingredients until just blended. Fold in the cranberries and nuts last. Pour into a greased loaf pan. Bake 55 minutes or until a knife comes out clean.
