Recipe: Savory Avocado Pesto

avocado pestoSpice up your meal with a whip of creamy avocado pesto! Delicious over pasta, salads, or vegetables.


  • 4 ripe avocados
  • 1 red onion, quartered
  • 1 green bell pepper, seeded, deveined, and roughly chopped
  • 1 jalapeno pepper, seeded and deveined (optional)
  • 3 cloves garlic
  • 1 bunch fresh parsley
  • 1 bunch fresh cilantro
  • 1/3 cup red wine vinegar
  • 1 tbsp salt, or to taste
  • 1/2 tsp pepper, or to taste
  • 1/2 cup olive oil

Place all ingredients except the olive oil in a food processor and pulse until everything is finely chopped. Then, with the motor running, drizzle in the olive oil and process until smooth. Adjust the consistency as desired with more olive oil, or with lime juice or water. This savory pesto will last in the refrigerator for up to two weeks.
