Recipe: Chewy Ginger Molasses Cookies

molasses_cookiesThese molasses cookies, created by Chef Albert Sabatini, are sweet, buttery, and full of spicy flavor for fall. Delicious with a glass of milk or cider!


  • 3 cups flour (good with half whole wheat flour)
  • 2 tsp cloves
  • 1 tsp baking soda
  • 1 tsp ginger
  • 1 tsp cinnamon
  • 3/4 tsp salt
  • 1 1/8 cups butter
  • 1 1/8 cups sugar
  • 3/8 cup molasses
  • 1 jumbo egg or 2 medium eggs

Preheat oven to 350 degrees. Sift together flour, cloves, baking soda, ginger, cinnamon, and salt. In a separate bowl, cream the butter and add the sugar. Blend thoroughly. Beat in the egg(s) and molasses. Then gently stir in the sifted dry ingredients just until blended. Drop the dough by teaspoonfuls onto greased baking sheets. Bake for ten minutes.

Makes about 5 1/2 dozen cookies.
